We start with one of our fine NSW bush honeys, then introduce a starter culture from one of our other honey harvests that has already candied. This helps produce crystals that our honey creamer whips delicately and aerates until they become smooth, soft on the palate and creamy...all the while with a beautifully natural sweet taste. The final step in the creation of our 100% natural NSW creamed honey is that we cool it and hold it a specific cold temperature until it 'sets'.
